Cool and slice it in strips. personally I prefer the SCD zucchini noodles more than any grain pasta that is non SCD. Guest guest Posted January 28, 2004 Report Share Posted January 28, 2004 Use zucchini...... peel them lengthwise with a veggie peeler..... then just keep taking strips off with the peeler. You'll have long thin strips that you can cut skinnier with a knife if you wish. Just lightly steam them or saute them for a few minutes in a little olive oil. Deeeelicious. Hi Nisha, I read your post and wondered all the time where it was going...did she really succeed in making the pasta stay together?? But at the end there it was: going through so much trouble and then seeing the whole thing FALL APART in the water....aaaaaaah! Terrible, did you cry? My husband is an avid pasta maker and says that without gluten, the whole pasta thing will be a failure, alas. You need to be able to really stretch the pasta and only the sticky gluten will give you that kind of stretch. I think it's already a miracle that you were able to dry the 'pasta' and cut it. It just won't work without. Earlier on there was a post by a mom from I think Oregon (Mindy?). She explained in great detail how she manages to expand her daughter's diet by reinforcing and lots of praise. But of course you may be doing that already all the time.
