Guest guest Posted January 25, 2004 Report Share Posted January 25, 2004 So I got through the confusion of the starter vs the Acidophilus BUT I put in a scoop and didn't realize it said one scoop per 2-4 quarts and I only made 1 quart. So, do I need to throw this batch of yogurt out? What happens if you use too much starter in a batch? Can I somehow add this yogurt to more goat milk to dilute the starter to yogurt ratio and make more without wasting this batch? Who would have thought one person could mess up goat yogurt so badly?! The only thing is your resulting yogurt may be thicker than if you had used proper proportions. You don't need to throw it out. Using too much starter just means that you have more little yogurt " fairies " (bacteria) breaking apart the lactose molecules. Some of them will be standing around with nothing to do. If you had used *too little* yogurt starter that batch would have to be thrown out. This is not a good idea. Besides too much starter ensures that all the lactose is broken apart, so this is not a wasted batch. >Who would have thought one person could mess up goat yogurt so badly?! Don't be hard on yourself. I am sure we all have SCD stories. How about leaving the top of the blender while making smoothies and having to wipe yogurt off the ceiling, cupboard doors, myself and the four year old boy standing next to you waiting for breakfast?
