But you need to go slow because of the die-off that could happen quickly if you introduce a lot of good probiotics (in the yogurt) all at once. It is still better to go slow. I make my nut milk with almonds and water, then add dates as a sweetener. Would this milk be ok to use, would honey be better, or should it not be sweetened? Also, does the outcome of the yogurt depend on how concentrated the nut milk is? If so, what's the best ratio of nuts to water to use? I blend for about 10 minutes. Do keep in mind that blending for longer than, say, 6 minutes, will heat up the nut milk to such an extent that you may need to cool it down first before you add probiotics/starter. The temp runs up to about 45 degrees and it should be a bit lower. > If so, what's the best > ratio of nuts to water to use? I am adult SCDieter with UC and been on SCD for 10 months. I have been tested with food allergy and I am supposely highly sensitive to honey. I would like to try almond milk yogurt but I don't want to use honey. Is honey important because we need some kind of sweetener for starter to work? Is there anything alse that can be used instead of honey and sacchrin (sp).How about some apple sauce or vegetable glycerin?
