A suggestion I have for using your bread for sandwiches. Stick the loaf in

the fridge until it is cold, slice it relatively thickly, freeze the slices and

then toast them before using as sandwich bread.

This is what I do with my reg old bread made from almond flour. Hope that

works for yours!

Best of luck

thanks. great idea. I just tried cutting some into thin slices and I dried

them out in a very low oven. They taste like melba toast.

" It is a bit soft and I am wondering how to adapt it so it will be a

bit sturdier for sandwiches,. It calls for 3 egg yolks and 3 egg

whites beaten until stiff. Do you think I should add less egg whites? "

If you use fewer egg whites, the bread will be much more dense.

Adding the whipped egg whites is what makes the recipes " fluffy " .

Can you try covering the loaf when it is almost done and then lowering

the heat in the oven to cook the center more thoroughly without

burning the top?

I made cupcakes yesterday using only cashew butter, bananas and eggs.

I'll post the recipe.
