Stick the loaf in the fridge until it is cold, slice it relatively thickly, freeze the slices and then toast them before using as sandwich bread. This is what I do with my reg old bread made from almond flour. Hope that works for yours! It calls for 3 egg yolks and 3 egg whites beaten until stiff. Do you think I should add less egg whites? " If you use fewer egg whites, the bread will be much more dense. Adding the whipped egg whites is what makes the recipes " fluffy " . Can you try covering the loaf when it is almost done and then lowering the heat in the oven to cook the center more thoroughly without burning the top?
