I've got the cookbook and websites etc but would like to know what everyone's favorite was. I had to use spectrum shortening instead of butter, and I bet the frosting would be even better with the butter, but it's good. The cake part is the consistency of cake, which was a nice surprise, since it's just made from honey, baking soda, eggs and peanut butter. Guest guest Posted January 14, 2004 Report Share Posted January 14, 2004 My vote definitely goes to the Peanut Butter Cake and Frosting on Pecanbread.com. If you use coconut oil to replace the butter, just use about 3/4 of the amount that is called for. Otherwise the frosting gets too thin. But I took this cake to a birthday party where " regular " kids gobbled it down and asked for more. I bake mine in an angelfood cake pan and it really helps avoid the gooey center problems that I had before. (I have a angel food pan that is two pieces. My kids love the peanut butter cake. They think when I make it, it is for their sake but really I make it from time to time because I am craving it.
