Was this on the initial stage of Atkins when you are only allowed a very small amount of carb or even later into it? So I am praying for the better insulin to arrive soon. Where is it coming from, is it in the post? I learned something yesterday that I need to have testing done for.. Most type 1 Diabetics it is autoimmune.. YIKES, and it Can happen later in life though not as often. With the amounts of insulin I am needing, it is possible though & I should have testing done for it OK so when will you do that. If you make a plan, make an appt for the testing I think it will help you to feel empowered with all of this. Val Carrots are a bit of a no-no in terms of veg as they are high-sugar relatively speaking. This is a good time of the year for soups and stews I find and makes it so easy when you just have to reheat when energy is low. Can be frozen also. I find flabour improves after a day or two anyway. Here are some low-carb veg you could make into a soup (and then whizz in the blender) or throw them into a stew: Bell pepper (sweet green) Broccoli Brussel sprouts Cabbage – all kinds Cauliflower Celery Eggplant Garlic Kale Leek Mushroom Onion Shallot Spinach String bean Swiss chard Tomato Turnip greens Watercress Zucchini What a n utritionist suggested to me at a point in time where I was extremely exhausted was to buy buy a large chicken, bung it in a large stockpot and then add low-carb veg. Boil the lot up with lots of garlic and herbs if you like them. The chicken will fall apart easily and you can just take from it what you want along with the veg and stock. Yummy and so easy. You could the same with fish or any meat really. I seriously think its worth looking into for you. You have all the predisposing factors, and a ton of the symptoms. And you're going to be on a sort of candida-diet anyway for the diabetes, so you may want to look into the anti-candida supplements, etc. I know how much you love milk, but I think if I were you, I would eliminate the milk completely. The oatmeal I tried was cooked and with 0 carb maple syrup made with Splenda. Tried that and again with just Stevia as i have to have it sweetened.. but both did not go over well. Steel cut oats are really tasty but they take about 25 minutes to cook. I really like that kind for breakfast when it's cold out. The real oats are so much more flavorful than the instant. I subscribe to the same thing Dr Peatfield does on this subject,. It is another SYMPTOM of hypothyroid. Once my hypo was corrected my Candida my symptoms went away. Raw milk is basically a perfect food by itself, protein, fat and carb all in one. Plus it's actually a great source of calcium that way. Pasteurized milk is not. I do not cook on days I work, not enogh energy for that. Or time. Looks like i have a htree days off coming up this week so I am going to shop and do some cooking for the week ahead. I LOVE onion soup, both cream and with beef broth. I have celery and mushrooms so may just pick up a cheap cut of meat or stew meat to cook with it. I just HATE buying regular meat anymore. I finally have my hormones (sex) at great levels and think the organic meat has alot to do with that, but I will be damned if I wil ruin good organic steaks wiht cooking them to death..
