whole vs. white

Isn't it amazing what a difference whole grain products make a

opposed to white ones? I had a nutrition professor in college

explain that in the process of metabolizing foods to turn them into

the energy our bodies need, that the whole grain product just has

more of the necessary nutrients required by the body to make the

transforamtion. (It's the Krebs cycle, for any biology or chemistry

buffs out there.) If we eat the " white " foods, our body still needs

all the nutrients that were removed by taking out the fiber and

bran. So, our bodies pull those nutrients from our organs and

muscles, depleting us of vitamins and minerals in the process. The

white product also gets transformed much more quickly, spiking the

blood sugar level, which is then followed by an abrupt drop in blood

sugar, or " energy. " She said this is a simplified explanation of why

we get so tired and cranky after eating sweets or white bread. I

thought that was pretty interesting...

youve explained how good it is for us, and the way it works in our
