What is absolutely critical is to get your glucose readings as close to normal (i.e., around 100), as much of the time as possible. What we need to do is for our bodies to mimic those of non-diabetics. That means attaining essentially normal glucose readings. Once you get a good handle on that, you can probably add back in some carefully-selected carbohydrates.
