One trick I have found to make peeling easier is to sprinkle a little bit of salt in with the boiling water. They are also great in salads. I hear people say they don't like hb eggs. But as with most foods, playing around with it helps. I like them warm or at room temp. I don't care for them cold or overcooked and dry. Here is how I make them. I put the eggs in a pan and cover with cold water, then put the stove (hob) on high. Once it comes up to a boil, I turn off the heat, leave it covered, and let it sit for no more than five minutes. Then run under cold water. This will stop the yolk when it has completey set but before it reaches that dry powdery stage. I take them to work like this and don't refrigerate. They're not going to go bad in a few hours. To eat them, I dip in sea salt and black pepper (after peeling!) So yummy! By the way, nature, G-d, or whoever, created eggs with a yolk and white for a reason. It is all good for you. I do this every morning with my soft boiled egg.
