Sandor Katz says in his book to just toss the one on the bottom, and use the

new one for each batch. They grow fast! You can also dry them out

and it makes a kind of paper. Someone was looking into making paper

from SCOBYs, they are mainly cellulose. Hmmm ... a new cottage industry:

you could have stuff floating on top of a big flat rectangular tray of Kombucha

(pretty stuff), then harvest the SCOBY and dry it for artsy paper. Or form them

into shapes and then dry them, little SCOBY boxes.

Just be careful where you toss it - wouldn't want it taking over the septic

system ;-)

You're not offensive, Kim, but a person who is more concerned about people's

spelling and grammar being absolutely correct, than the exchange of actual

information, is. I consider myself to be reasonably good at spelling, but I

think it's an incredible insult to those who aren't - for whatever reason - more

often than not through no fault of their own. No I don't want to start another

debate about the education system.

It's trivial but it's certainly worthy of comment. A list full of intelligent

people such as this list is a great place to learn random new things, and little

tangential discussions are often fun.

Back to the topic: " SCOBYs " avoids confusion, but if you use the

acronym-turned-word " scoby " there is a good reason to follow standard English

rules for its plural ( " scobies " ). If you spell it " scobys " , a person who is not

used to reading about symbiotic cultures of bacteria and yeast might hear it in

their head as rhyming with " fly-bys " or " abyss " . Confusion would ensue.

Proper orthography saves readers time and promotes optimal comprehension of the

content, so it's worth learning it if your writing will be read by other people.
