I have been tempted to buy this before, and went for it this time. I know their honey is unheated/raw. So, I am confused as to why the enzymes in the honey aren't breaking down the nuts. They said they have some pots that have been soaking in honey for 18 months and there's no change. Any ideas? Thanks Jo ___________________________________________________________ Moving house? It has been used to preserve meat too. It keeps the air out, and the osmotic pressure keeps bacteria from growing (plus it has it's own antibiotics). When I make beer with honey, it takes FOREVER to ferment. As for the enzymes ... I don't know what honey enzymes are supposed to break down, but it's unlikely they could work without addtional water.
