Hello everyone!

My name is Schmidt. I have been following the " healthy

lifestyles " movement for over ten years. First I went Vegetarian.

Then I went Vegan. Then I tried raw Vegan. These eating habits

either tasted terrible, or I gained weight, or I felt terrible or I

acted terribly.

Luckily, a producer of raw vegetables referred me to

westonaprice.org. Now I have come full circle to meet the future,

which I think is just a continuation of our past, the pre-industrial

lifestyle!

So I joined WAP and attended the conference in October. The food was

delicious. The philosophy makes sense!

Now I want to present an opportunity to all of you. Now is the time

for us to get the message of the WAP lifestyle out to the world the

best way I know how. It is time for us to open a restaurant that

conforms 100% to the time honored wise traditions of pre-industrial

societies and the scientifically proven principals and philosophies

of WAP!

The location I have in mind is in Sterling, VA, just outside of

Washington, DC. The demographics are outstanding! There are over

150,000 people living within five miles of the location. The main

road in front of the location gets over one hundred thousand cars

driving by every day! The average household income within five miles

is over one hundred thousand dollars. The majority of the population

is white, however this area is becoming more of a melting pot than

New York City. I have met people from all over the world. There are

numerous health food stores in the area. People are very conscious

of their health. Fairfax County, next to D.C. has one of the highest

life expectancies in the U.S. for men.

The location is a failed Mexican Restaurant/Bar. It is a 4100 Sq Ft

space with three separate eating rooms, a 20-seat bar and an outside

deck. I have pictures if you want to see them.

I ate there a few times and I can tell you they failed because the

food did not taste good and they did not know how to advertise or

manage the place. They had no delivery service and no website. I

know I can make it a success from the bar alone. But that is not my

intention.

I want people to start eating real food again so they will become

healthy again, and live longer without the use of harmful

prescription drugs. But I especially want people to enjoy the

deliciousness of really real food! My goal is to reopen the site

with an old world atmosphere in keeping with the food philosophy as

established by WAP. This includes making our own fermented products

as well. There are local farmers who raise pasture fed livestock and

fowl and organic produce is plentiful.

If you can live with a bar on the premises (no smoking), this is

what I am looking for to get this new venture off the ground.

3 Assistant Managers with experience

1 Bar Manager with experience

4 Bartenders with experience

4 Chefs/cooks with knowledge of WAP philosophies and cooking

techniques

6 Food Prep Workers

3 Hostesses

15 Servers

6 Busboys/Janitorial

6 Drivers/Delivery

2 Canvassers

1 Webmaster/Network Engineer

2 DJs

Hundreds of armchair managers with lots of good advice!

This is a ground floor, grass roots opportunity. We expect to be

fully operational by March 1, 2005. Once this location becomes

stabilized, we plan to open other locations in the DC area. From

there, we will franchise out to the rest of the country with the

first opportunities provided to our employees and supporters of the

WAP lifestyle. For anyone who wants to relocate, I have two rooms

in my house available for temporary housing.

Finally, we need a name for the restaurant! If you have any ideas

for a name or any advice at all about any aspect of this new

venture, feel free to contribute. If you do and we use your

suggestion, stop by sometimes for a free meal on me! The winner of

the Restaurant name will get free meals for a month!

Good luck, ! Ordinarily I'd delete any commercial announcements and

ban the author, but this sounds perfectly suited to the list, and I wish

you luck!

ideas:

Regarding the bar: standard bar fare or native homebrews? eg - mead, etc.

informational sidebars on the menu (like " Nourishing Traditions " ) to

help educate would be neat

costume the staff, there was a steak house chain ( " Steak & Ale " I

believe) that did this and it was quite charming (decor also)

I hope you won't overlook the message that this food prep can be

easily done at home; except your expert secret recipes and menu

selection of course ;)

Yes, that's a brilliant idea! You can make gourmet alcoholic drinks

based on traditional cultures instead of pandering to our current

culture of mass-produced junk alcohol, etc. You can make African

palm wine, Mexican pulque, water kefir, etc. That could be a major

hook for the operation as a whole and a major niche in itself.
