Guest guest Posted April 1, 2011 Report Share Posted April 1, 2011 mary, We are both Gluten free and Dairy free (not completely Casein Free) and we are going to soy free route little by little. We noticed the biggest change with the gluten. Jake has always been dairy free because he has some issues at birth. we were always on soy products until recently. We just started switching to Almond milk and a few less soy products mostly because my husband is having soy issues. Jake has not seemed to care. We notice fewer agry outburst with being gluten free. Less stimming and aimlessly in his own world. He does still have his moments. he did start speaking words shortly after starting the diet but who knows if that is just timing. I dont attribute everything to the diet. He seems happier without the guten so we have stuck to it. He had a teacher who was not on board when we first started. I kept noticing that each day he would come home and be all out of sorts. I kept asking her if she was giving him anything other than what I sent in. She said no. Well, he comes home and is so unhappy and moody and angry. I didn't understand and just knew he was getting something. Later, I learned that she was using gold fish as rewards! She said well its jut a few! I said absolutely NO! Nothing! If I dont give it to you, then you can't give it to him! A few weeks later she called and apologized to me. She totally saw the difference in his behaviors once SHE stopped giving him the goldfish. She said " I didn't believe that diet could make a difference, but you made a believer out of me. " I never had to worry after that. Ever she would say to me later, " do you think he could have eaten some gluten, or do you think such and such could have gluten in it? " when he was not acting " normal " for Jake. It was a great moment. Validation! We all need that sometimes, especially from the naysayers. Holly Oh, and I personally do NOT think it works for everyone. You have to give it your best shot. Some people try it and see no difference. Some people try it half way and see no difference because their kids are still getting gluten in hidden thing. It is in just about everything. You have to start small. It gets worse before it gets better. If your child has a gluten issue, it is like taking them off a drug. They go through a kind of detox. Depending on how bad it is, their behaviors can get crazy. Many give up because they can't take it. We started small. Replacing things like pretzels, crackers, they things he liked and would tolerate. Then as he got used to the taste of those, we started replacing other things. It took time. We did NOT do it all at once. We would have failed. I knew that about myslef. Our entire family went gluten free. I also knew that about myself. Cross contamination is just as bad as eating gluten for anyone who is really sensitive. Do your research. It is truly a personal decision to try or not try. It worked for us. That's all I can say. If you need help or have questions, I will be happy to help. No pressure! LOL! Guest guest Posted April 1, 2011 Report Share Posted April 1, 2011 Research has shown the gfcf diet works for only 91%. we unknowingly had gluten infractions before we knew all the sneaky ways manufacturers include gluten and casein. Now, we are abreast of the terminology in a big way. For years, we thought Rice Krispies were GF. Nope, the malt flavoring has gluten. Once removed, because he ate it every morning, much changed. For us, we gained intelligible speech within a couple of days with the removal of casein. Most people remove the casein first because it leaves the body faster than gluten and they see results faster. For us, gluten caused the GI issues and casein caused the neurological issues. We have become pros at gfcf nutrition. Some times the web sites are so overwhelming with all their terminology and they also talk about dyes and artficial sweetneres. I just needed to do things one step at a time. There are times I find a new word and it just makes me so mad! It really does pay to start being more " if it doesn't come straight out of the grown " type person. " We do as much organic as possible (not easy here in Idaho), and we that goes for our meats as well. Read *all* labels each time you purchase (manufacturers change proprietary ingredients all the time),avoid deli meats (we use Hormel All Naturals -lactic acid is NOT from milk in that product-WalMart has it cheaper). For casein, lookout for words such as lactose-free, as this does NOT mean milk protein (casein) free. Other words to look for and avoid on labels (boxes, meats, frozen items, and cans)are the following: whey, whey solids, curds, milk and all words containing the word milk(including dry milk and evaporated milk), milk solids, non-fat milk, low fat milk fat, nougat, non-dairy (believe it or not, these products-like non-dairy creamer and frozen non-dairy whipcream- have milk in them!), buttermilk solids, cream, half & half, butter, milk chocolate, casein, caseinate, calcium caseinate, sodium caseinate, magnesium caseinate, all other words with caseinate attached to them, casein hydrosylate, lactalbumin & lactalbumin phosphate, lactoglobulin, lactose, junket, custard, malt, malted milk, ghee, artifical butter flavor,butter , butter fat,butter oil, cheese, condensed milk, cottage cheese, goat & *ALL* other mammal milks,lactic acid starter culture (check with manufacturer, may contain milk), lactoferrin,lactulose, naturlose & tagatose(sugars derived from whey), sodium lactylate (might contain casein, check with manufacturer or when in doubt, don't), and any words containing *cream*. A *D* on a Kosher label next to a *K* or *U* indicates the presence of milk protein. Watch out for hotdogs, yogurts,puddings, butters (we use Earth Balance Butter Substitute), and flavorings (caramel coloring, brown sugar flavoring, bavarian cream flavoring,coconut cream flavoring, and natural chcolate flavoring). ***** For gluten, you can download/print a brochure at the following link, BUT remember this is only for gluten free.You will have to disregard the *dairy* portions.
