sourdough---chemistry??

I have wondered for many a year about the science and chemistry of it. I can

attest that sourdough sitting out on my countertop and being re-fed

regularly---and used in my baking----doesn't sicken or harm anybody. Part of

the time I feed liquid of milk and part of the time I use water with the flour.

Can someone please tell me how sourdough bread doesn't make you sick?

You let milk, etc sit out for days and it's ok. Just wondering.
