A few weeks ago, I have had a discussion with a french canadian dietician who was seduced by the Seignalet diet. I don't like it's nutritionnal approach, but some available evidence suggests that fasting followed by vegetarian diets might be useful in the treatment of RA : Müller H, de Toledo FW, Resch KL. Fasting followed by vegetarian diet in patients with rheumatoid arthritis: a systematic review.Scand J Rheumatol. 2001;30(1):1-10. I do not say that your uncle should try fasting and vegeterian diet (I don't like the way Seignalet wanted to give everyone this kind of diet), but I wanted to give you this information. Unfortunately, there is not much review or meta analysis about this subject. Good luck and courage for your uncle. My mother,now a 95 1/2 very healthy years old, independent living etc. Was dx with RA 50 yrs ago..she went to a naturapath and chiropractor. He did spinal manipulations and put her on a very very very low protein diet. NO animal products, beans and any high protein vegetable products were also restricted....even bread (at 2 gm/slice - she made her own potato bread) she recovered and has not had this problem since. She now eats everything and anything. It seems to me that her 2+ yrs on this very restricted diet cleansed her system.
