I'm no soy expert but just read this in a newsletter I get called Alternatives For The Health Conscious Individual, April 2008:

"Fermented forms of soy, such as tofu and tempeh, are fine. The fermenting process gets rid of the substances that interfere with iodine."

I believe miso soup is also fermented but someone else will have to verify that.

This newsletter has been a never ending source of fabulous information by Dr. . I've received it for a few years. It's not cheap but has too much good advice for me to pass up.

The April 2008 issue is about depression and the underlying adrenal/thyroid/pituitary deficiencies that cause it. Anyone who has or had a thyroid problem can attest to the depression that results.

I had checked with my ND this week prior to seeing this Janet, and

this is what he said, confirming this:

" Ya, soy is ok in modest amounts, usually, but not too much tofu or

soy milk . Fermented soy is fine, actually really healthy and what

soy eating cultures eat, mainly. For instance, miso and tempeh,

maybe soy sauce and whole soy beans like Edamame (whose da mommay?)

Anyway, I like Cohens info and research, so he is probably

right and the article sounds about right, especially the end (he is

the NotMilk.com guy). ROck on.... "

ok, so what constitutes " fermented? " cooked? set in water until the

been sprouts?

(no bean expert, and hopelessly already failed her air and

water diet)

Miso soup is fermented as well as tempeh.
