Rob, congratulations on your weight loss. What an encouragement for you!

Unfortunately the next pounds may not come off so quickly but now you know you

can do it, so just keep going.

As for boring meals, I tend to do lots of salads in the summer. Cut up boiled

potatoes and green beans, add some onion, red wine vinegar and a bit of olive

oil for a nice (carb) salad. Steam broccoli just a little and add it into a

tossed salad. Maybe cook some vegies a bit and put them with an egg and some

egg whites to make a sort of crustless quiche.

But you have my sympathy. Boredom can get to be a problem and also all the

extra time it takes to chop! Doing a whole bunch at once might be a plan and

then you have handy, legal snacks.

Hehe yeah I tried the Mrs. Dash thing hehe. Not that good.

I'm debating eating most of my vegetables raw now, as I prefer their

normal taste to cooked with no butter or anything.

Rob,

I LOVE baked potatoes (sweet or white) with cottage cheese instead of

butter, Almond Accents and some of those salad crispy things in the salad

dressing section at the grocery. I've even convinced my husband that it

tastes as good as butter!

Also, when you have a lot of weight to lose, it will come off rapidly at the

beginning and should taper off after a while.

My list of vegetables is pretty narrow I suppose: celery, pickles,

cauliflower, broccolli, green beans, baby carrots, cucumber, tomato,

(sometimes corn in place of my potato).

My most common daily menu is:

- 2 egg whites, 2 eggs, poached on two pieces whole wheat toast.

- Can of tuna, mixed with 1tbsp non-fat miracle whip with celery

and pickles. Grapefruit for the carb.

- Chicken breast sandwhich on whole wheat with lettuce and

cucumber. No mayo or anything.

- Two hard boiled eggs. An apple or bannana for carb.

- BBQ'd chicken breast, potato, steamed vegetable.

- 1 cup cottage cheese blended with 1 cup frozen berries.

Hi Rob,

Congrats on your awesome progress to date!! You should be very proud

of yourself!! As far as veggies go, you might want to try steamed

with some Molly McButter or Butter Buds... definitely buttery taste

and pretty low-cal. Salty though, so if sodium is an issue, take it

easy on that stuff.

I tend to eat a lot of the same veggies all the time too. I like

carrots (these are an every day commodity), asparagus, salads (every

day), artichokes, cauliflower, green beans, red/yellow bell peppers.

Occasionally I eat some broccoli, and one of those veggie medleys

from the frozen food aisle that has snow peas, water chestnuts,

carrots (of course) and baby corn. Those are yummy, especially when

the vegetable crisper is bare.
