Hey Simon,

Ok, I've printed this out and read it once, I'm starting to get it

but still....... I must be brain dead. I assume I shouldn't be

eating saurkraut? When I think of acidic I think lemon, saurkraut,

pickles stuff like that 'regular' food is too? was saying

something about rice too. Oh this is frustrating, why can't I be

rich and be able to afford a macro chef? Gayle? Would I be huge or

what?

All I can say is you're on your way to ipod worthy.

Hello Reg,

It is fine to eat acid forming foods as long as you also eat slightly more alkaline forming foods. If about half your daily food is made up of vegetables you will eating an alkaline forming diet overall even though you would be eating acid forming foods like brown rice.

Imagine putting all your days food on your table and you would want to see that slightly more than half the food is vegetables. These could be cooked veg, salads, raw veg as a snack, juices and soups.

Hi Simon and Reg

Just thought I would throw this out. I actually got this from Leno at the SC. As

we know grains are acid and you can make balance for this by eating lots of

vegs. The other way is through chewing. The saliva in the mouth is alkaline and

so through chewing you actually change the rice from acid to a more balanced

food containing both. Interesting eh??

Hey ,

Ok, so I'll chew chew chew. But if acid turns more alkaline while

chewing does that mean I should gulp down my veggies? I know that

sounds silly but seriously does it work the same for alkaline

turning acid from chewing too much?

Not sure if you read the post to Simon about getting acid/alkaline

to click in my head but many have tried and my brain shuts down. :(

Hi Mel,

I agree, although as we do not really know whether chewing food necessarily make the food more alkaline it is difficult to say the chewing will for example turn brown rice from being acid forming to alkaline forming. To decide whether foods are acid or alkaline forming someone has to eat them and then test their urine to see if that food has created an acidic blood condition. This would mean that the rice will have already been mixed with saliva, although not with a hundred chews I’m sure. To me it is interesting the people eating fairly normal diets should end up with consistently acidic saliva.

I do get your point about someone who is eating an highly acid forming diet however there is a lot of power in saliva and it has been used over the years as a source of healing such as in the Tibetan exercise that Ilanit mentioned. The Chinese also have a similar traditional technique that helps you to maintain healthy teeth by rubbing saliva a number of times around the gums. I still think there is validity in chewing to stimulate saliva in order to break down foods and create a more balanced acid/alkaline ratio. I think both sides are related and work together if that makes sense. Changing the diet and also paying attention to chewing. I am having a bit of a grin to myself here coz I don't win awards for my chewing abilities. Don't we often push the very thing we need to do for ourselves!!!

I also highly recommend eating lots of fresh vegetables. I have observed many many people eating macrobiotics and there is a tendency to choose grains/grain products and well cooked vegetable dishes over the lightly blanched, steamed, pressed or even raw dishes. Not only do these help you to feel more relaxed, they also give you a bright, fresh and youthful appearance. I think it is especially important for women with children and for those people who live in cities or areas that have a lot of buildings in proportion to trees and green.

A simple rule of thumb that helps one to get back to balance is to eat the same amount of vegs as grains so if you take a second helping of the grain dish you have to match it with the same amount of vegs. Sounds like you could overeat and that is possible for a while but soon it feels like too much and that second helping of grain is not as appealing when you know you also have to eat the vegs!!

I agree, although as we do not really know whether chewing food necessarily make the food more alkaline it is difficult to say the chewing will for example turn brown rice from being acid forming to alkaline forming. To decide whether foods are acid or alkaline forming someone has to eat them and then test their urine to see if that food has created an acidic blood condition. This would mean that the rice will have already been mixed with saliva, although not with a hundred chews I’m sure. To me it is interesting the people eating fairly normal diets should end up with consistently acidic saliva.

I do get your point about someone who is eating an highly acid forming diet however there is a lot of power in saliva and it has been used over the years as a source of healing such as in the Tibetan exercise that Ilanit mentioned. The Chinese also have a similar traditional technique that helps you to maintain healthy teeth by rubbing saliva a number of times around the gums. I still think there is validity in chewing to stimulate saliva in order to break down foods and create a more balanced acid/alkaline ratio. I think both sides are related and work together if that makes sense. Changing the diet and also paying attention to chewing. I am having a bit of a grin to myself here coz I don't win awards for my chewing abilities. Don't we often push the very thing we need to do for ourselves!!!

I also highly recommend eating lots of fresh vegetables. I have observed many many people eating macrobiotics and there is a tendency to choose grains/grain products and well cooked vegetable dishes over the lightly blanched, steamed, pressed or even raw dishes. Not only do these help you to feel more relaxed, they also give you a bright, fresh and youthful appearance. I think it is especially important for women with children and for those people who live in cities or areas that have a lot of buildings in proportion to trees and green.

A simple rule of thumb that helps one to get back to balance is to eat the same amount of vegs as grains so if you take a second helping of the grain dish you have to match it with the same amount of vegs. Sounds like you could overeat and that is possible for a while but soon it feels like too much and that second helping of grain is not as appealing when you know you also have to eat the vegs!!

well I have been putting off understanding so when the topic comes

up I am interested. I do want to understand it simply for

understanding it, like a puzzle.

During pregnancy I ate veggies, tons of veggies, craved them every

Hi Reggie

Yes it is great to learn all the different aspects of food and preparation but

there is a delicate line between the learning and becoming too obsessed with the

whole food thing. Intellectual discussions are fantastic but far removed from

actually getting in the kitchen and cooking. At that time intuition, love,

creativity, fun, gratitude for the food and all those lovely words come into

play. If one is worrying about the calories, the mineral content or which energy

a food has then something is lost in the cooking and the meal becomes flat and

un-inspiring or not satisfying. Meals should still be a source of fun, enjoyment

and a time to gather with family and friends.

Cravings are very interesting because they can come for different reasons - an

inbalance, emotional upset, habit or good intuition. During pregnancy a baby

likes a full menu and often cravings come from the baby too. I think it was

wonderful that you craved all those veggies and you both must have been using

great intuition. When cravings arise for something far out especially in

pregnancy, it is a good idea to satisfy them with a similar food but of higher

quality for example if you crave corn chips then maybe you need more oil and

having tempura would be a better choice. As for eating what you are not

attracted to, this is within a meal that has a variety of dishes. Many people

love to eat grains whether it is bread, cracked grains or the like. If a meal is

presented then they automatically pile their plates up with the grain dish. Then

they don't have much room left for the veg dishes. Someone else might prefer

oily food and likewise eat a large portion of deep fried tempeh, again not

leaving enough room for the other dishes. Of course I am somewhat exaggerating

here. If both of those examples ate a little less of what they 'loved' and made

an effort to eat slightly more of the less appealing dish it would lead to more

balance in both diet and cravings because many times they are related.

Hi Reggie

Yes it is great to learn all the different aspects of food and preparation but

there is a delicate line between the learning and becoming too obsessed with the

whole food thing. Intellectual discussions are fantastic but far removed from

actually getting in the kitchen and cooking. At that time intuition, love,

creativity, fun, gratitude for the food and all those lovely words come into

play. If one is worrying about the calories, the mineral content or which energy

a food has then something is lost in the cooking and the meal becomes flat and

un-inspiring or not satisfying. Meals should still be a source of fun, enjoyment

and a time to gather with family and friends.

Cravings are very interesting because they can come for different reasons - an

inbalance, emotional upset, habit or good intuition. During pregnancy a baby

likes a full menu and often cravings come from the baby too. I think it was

wonderful that you craved all those veggies and you both must have been using

great intuition. When cravings arise for something far out especially in

pregnancy, it is a good idea to satisfy them with a similar food but of higher

quality for example if you crave corn chips then maybe you need more oil and

having tempura would be a better choice. As for eating what you are not

attracted to, this is within a meal that has a variety of dishes. Many people

love to eat grains whether it is bread, cracked grains or the like. If a meal is

presented then they automatically pile their plates up with the grain dish. Then

they don't have much room left for the veg dishes. Someone else might prefer

oily food and likewise eat a large portion of deep fried tempeh, again not

leaving enough room for the other dishes. Of course I am somewhat exaggerating

here. If both of those examples ate a little less of what they 'loved' and made

an effort to eat slightly more of the less appealing dish it would lead to more

balance in both diet and cravings because many times they are related.

Another interesting piece of info that I got from Dr Yu (clinical

professor of Urology at Washington University Med center) at the SC (maybe

leslie went to his lecture coz I missed it) is that when we get into our 40's

certain enzymes that are used for digestion are no longer produced so it is very

important to use fermented foods especially pickles to help the digestive

process. Maybe this has something to do with the weight gain many folks

experience at that time. Yu's present focus/study is on digestive enzymes and

probiotics in nutrition, detoxification and cellular regeneration.

Hi Simon

Another interesting piece of info that I got from Dr Yu (clinical

professor of Urology at Washington University Med center) at the SC (maybe

leslie went to his lecture coz I missed it) is that when we get into our 40's

certain enzymes that are used for digestion are no longer produced so it is very

important to use fermented foods especially pickles to help the digestive

process. Maybe this has something to do with the weight gain many folks

experience at that time. Yu's present focus/study is on digestive enzymes and

probiotics in nutrition, detoxification and cellular regeneration.

My understanding of why we need to chew well to make our food

alkaline is because our stomach is acid. We want to have a strong

attraction between our stomach acid and well-chewed alkaline food for

the best digestion.

My understanding of why we need to chew well to make our food

alkaline is because our stomach is acid. We want to have a strong

attraction between our stomach acid and well-chewed alkaline food for

the best digestion.
