Guest guest Posted June 3, 2006 Report Share Posted June 3, 2006 Recipe of the week as the weather cools down RECIPE FOR THE CHANGING SEASON: This is yummy and warming and easy to make - a perfect dinner dish served with brown rice or millet or over wholegrain noodles of your choice with a side of broccoli. So little preparation, so quick and have leftovers over sourdough wholegrain toast the next day for lunch. Enjoy! SAVOURY TEMPEH OR TOFU 1 cup ready to eat tofu or tempeh cut into thin slices* 1 onion, thinly sliced 1 cup mushrooms, thinly sliced 1 teaspoon organic mustard (wet - I like the new eden valley in the yellow squeeze bottle) 1 Tablespoon unrefined sesame oil - regular or toasted 1 Tablespoon sauerkraut (Eden Valley or similar from health food shop or Peaches in Fremantle) 1 Tablespoon mirin (Spiral brand) 1/2 cup filtered water 1-2 teaspoons shoyu (use less if using seasoned tofu or tempeh) 1/2 cup fresh or frozen green peas (or try broccoli if prefer) Heat a frying pan on a low flame. Add the oil and turn up the heat. Saute the onions for a couple of minutes, then add the tofu or tempeh for another couple of minutes. Add just enough water to cover the bottom of the pan. Then add the sauerkraut, mirin and mustard and mix through. Season with the shoyu. Cover and cook for approximately 5 minutes. Add the peas and cook a couple more minutes. *If you would like to use regular tempeh (not the Tally-Ho Ready-to-Eat variety which contains a lot of oil), then simply steam it for 25-30 minutes with a light sprinkle of shoyu or you can pressure cook for the same amount of time with 1/2 cup of water and 1 Tbsp. shoyu and an inch of kombu. Then it is ready to add to any recipe calling for tempeh where there is minimal further cooking. Remember, tempeh must be well cooked.
