I notice that when I would try to wash and soak a grain and then dry roast it, it would just stick to the pan. What am I doing wrong? Guest guest Posted December 24, 2006 Report Share Posted December 24, 2006 thanks for the suribachiing tip - new word huh!? the only dukkah i liked was very mild with maybe coriander and cumin - just a little - dont like too much cumin but it also does go nicely with tempeh - there is a tempeh company that makes it with cumin seeds in it but you can only get that in perth! so you have to cook it in. somewhere i read that ohsawa said spices are more yin that sugar! well they are very explosive esp some of the hotter ones. and herbs are strong as well. I found it amazing when i made a nomato sauce and used some italian herbs in small amounts no matter what i did to the rubber pressure cooker ring in terms of washing - baking soda, ozone etc I could not get the smell out and it made the subsequent batches of rice cooked in there take on that aroma from one use. amazing. So if it penetrates like that into rubber imagine how herbs penetrate into our cellular membranes. maybe that is why spices and herbs are tradiitonally used in heavy dishes with animal fats to break them down but if one does not eat those then herbs and spices probably need to be used with more caution as there is nothing so very heavy to balance or absorb them.
