White beans are cooked with kombu sea vegetable, then pureed with calcium rich blanched almonds, sweet yellow onions, crisp green celery, gentle yet mineral rich wakame sea vegetable, powerfully healthy shiitake mushrooms, live enzyme rich yellow miso, and fine dices of carrot, cucumber, zucchini,and parsley, to create a perfect blend of summer abundance in an healthy miso soup. BROWN RICE AND WHOLE RYE PILAF SMALL___ LARGE___ The all important brown rice, medium grain used here to promote strength and vitality without creating too much body heat, cooked with kombu sea vegetables to further enhance the minerals within, then combined with whole grain rye, vitamin E and mineral rich toasty and flavorful sunflower seeds, and an abundance of red blood cell building fresh green parsley, to form a simple and healthy whole grain pilaf. WHOLLY MACRO'S FAMOUS BARBECUED " HOME MADE " SEITAN SMALL___ LARGE___ Anyone who has ever made or tasted seitan made from scratch will appreciate how special this dish is. Seitan is basically pure protein, with lots of naturally occurring minerals, and virtually no fat. It has a wonderful chewy texture to it, and is very versatile. In this dish it is braised in a yellow onion, almond butter, mustard, brown rice syrup, shoyu, and barley malt " barbecue " sauce, then garnished with fresh chives. Very unique and delicious. COUSCOUS TABOULI SMALL___ LARGE___ Whole wheat couscous makes a perfect grain base for this salad like tabouli that is accompanied by finely diced enzyme rich and digestion supportive pickled cucumbers, red radish, iron rich parsley, strengthening and vitalizing roasted pine nuts, naturally fermented black olives, a splash of omega three fatty acid rich extra virgin olive oil, alkalizing umeboshi plum, and lots of liver cleansing fresh lemon. SESAME SNAP PEA KINPIRA SMALL___ LARGE___ A spin on the classic kinpira, light and fresh brilliant green snap pea pods, are ever so slightly blanched, then tossed with blood cleansing and strengthening fresh burdock root, and beta carotene rich carrot juliennes flavored with toasted sesame oil and morsels of fresh ginger, creating a feast of visual and healing energy. STRAWBERRY SHORTCAKE SMALL___ LARGE___ The most delicious and understated dessert, a delicate and light cake made of whole wheat pastry flour, brown rice syrup whole grain sweetener, and natural corn oil, is filled with fresh, juicy, and succulently sweet strawberries layered between rich dollops of healthy, low fat, tofu " whip crème " , topped with another layer of cake, and garnished with rice syrup glazed crunchy and calcium rich sliced almonds.
