boiling issue

I have another new batch of kombucha almost done. I have read a lot of

different

opinions about this boiling of water for the tea. Some do, some don't. Some

say just use water that you normally drink. We have very good well water, and

I have been boiling all my water as the directions had said.

I like the idea of concentrating the water, sugar, and tea, and then adding

cold water to shorten the cooling time. Is there any problems using unboiled

water that anyone knows about?

Buying bottled water is not only expensive, but I have read articles that that

is not always safe either, the plastics leaching toxins into the water. I am

up to 4 gallons at a time, so thats a lot of kettles going. If I don't really

need to boil the rest of the water, I will try it without boiling it.

I have boiled the water for the past 10+ years and would on occasion

get mold or no growth at all. When I started back up again recently I

did as the group advised and made a concentrate adding room temp water

to make the full amount, and have had no problems at all this time.

If you have a good clean water source, I highly recommend doing it

this way as there is no chance for mold spores to settle in during the

cooling down period if you eliminate it.
