It turned out great and I used some to make the NT ketchup which is really good. Amy Waters Small fish for fish sauce? Does anyone have any suggestions where I can get fish with their heads still on? Man you should have seen the look on my husbands face when he saw the jar fermenting on the counter for three days. I didn't tell him I used it to make the ketchup he loved so much. If you have an " ethnic " part of town, they will sell them whole. My Korean store does, and when I was in LA I chanced upon this wonderful little hole-in-the-wall store with the most magnificent seafood dept I've ever seen -- and the fish were all whole. Our local grocery though has lots of whole fish ... they will clean them if you want, but you can buy them whole too. I notice that in the Korean store, the fish are frozen WHOLE including the guts. Or any ideas for a substitute? @@@@@@ Hi Nermal, The ocean--oftentimes you can find fish there that still have their heads on, but I can't speak to the specifics and I'm going more by theory than observation on this one. Mike SE Pennsylvania p.s. The answer is Chinese, Korean, Vietnamese, and Thai grocery stores. Wide variety of frozen small whole fish, etc. If you don't leave near any, just move.
