Diane,

I don't have a recipe but i used to use the Veganaise brand of vegan mayo which

tasted exactly like the egg based one.

If you google vegan mayo recipe a ton of recipes come up-I haven't tried any of

them though

Diane, this recipe is from the manual that came with my Bamix that I purchased

many years ago. The method of making it is important. If you don't have a Bamix,

I think any stick-type blender would work with this method.

MAYONNAISE

 

1 egg at room temperature

1 T. lemon juice

1 tsp tarragon or salad vinegar

1/4 tsp salt

1/4 tsp paprika (optional)

1/4 tsp dry mustard

1 C oil

1 T powdered milk

 

Ingredients must be added in the order listed. Use a narrow-mouth pint jar. Hold

the wand on bottom of the container for 20 seconds, then move up and down slowly

until completely mixed.

 

 

Here is a recipe from Beard:

 

2 egg yolks

1 tsp salt

1/2 tsp dry mustard

1 pint olive oil

Lemon juice or wine vinegar to taste

 

Be sure all ingredients are at room temp. You may use a shallow dish and a fork,

a bowl and beater or wire whisk, or an electric beater.

First, beat the eggs yolks, salt and mustard together.

Then start adding the oil, a few drops at a time, thoroughly beating it in after

each addition.

If mayo starts to curdle, you're adding the oil too fast. 

Correct curdling by starting over with another egg yolk and a little oil and

then gradually beating the curdled mixture into this.

Continue adding oil until the mixture is thick and stiff.

Thin with vinegar or lemon juice.

Add any herbs/spices to your own taste.

 

I don't know what type of equipment you have, but I can look up other recipes

for you if you want. It's obviously much easier to make mayo with some type of

electrical assistance.
