I have several recipes from the early stages of SCD here www.scdandme.com (if you are following pecan breads stages) If you are going to be sure he doesn't get any illegal food you will need to make everything form scratch. In the beginning SCD can feel very time consuming but after a while you will get routine into it and its easier. I felt I lived in the kitchen the whole day the first weeks, then I got routines and now I'm only making food to dinner and I also make enough food for the evening and next day (until dinner again). So I don't spend so much time any longer. It took a while at introducing the food but now I have a good variety of food choices. Its common to be hungry in the beginning of SCD and thats normally because the diet lacks fat from the beginning. Some kids have difficulties digesting fat and need enzymes. I was cooking some things, and especially baking almond breads, biscuits muffins etc to make sure he'll eat them, to avoid extra stress after starting. pecanbread.com was a good websites for recipes and tips, not sure if still there... There are often reports of kids not tolerating nuts on SCD and IMO it's because they are hard to digest. If you can soak them and dry them before making them into nut flour that can be a real help. If your son will eat the smoothies, spaghetti squash pasta, and other things like that without nuts, it might be a good idea to see what happens like that for a while. For breakfast, there are loads of egg kind of things that he might like, omelettes, even pancakes (with lots of eggs and some coconut flour--which doesn't contain phytic acid, like the nuts do), fruit kebobs (dipped in SCD yogurt when you start making it). I find " Breaking the Vicious Cycle " has some nice cake recipes. My daughter loves her almond butter as well. The best bread we have baked is:- 3 cups of almond flour a little Hymalaen salt 1/4 cup of GAPS mayo 1/2 cup of fizzy water 5 eggs. Mix and cook at 170 degrees c for about 45 mins until golden brown. I often mix seeds into it too. It doesn't toast well but she is very happy with it as it is. I hope he enjoys it. The SCD/GAPS diet is not that tricky once you get used to it.
