Actually, I just got sent this from the lady giving me my eggs in response to my asking they not be washed: "Actually I don't refrigerate the eggs. I keep them at around 50 deg, and even washed they keep for a long time. My friend kept them unrefrigerated last winter for about 4 months on the floor of her unheated guest room. A lot of people who get eggs from us want them unrefrigerated as there are supposed to have more enzymes. Our eggs are also fertile, which some say adds other enzymes to them. " I am so excited! What is really weird is what Mercola says about eggs, that they should not be put in the blender or overly agitated...he says it ruins the very fragile protein enzymes. I was not so sure I bought into this, as one would think stomach acids would do that if they were so fragile! Well, I hope it is not the case, as I use my eggs in my blender drinks. I have never refrigeratd my eggs from my chickens and had them on the counter for a couple of weeks. Rhoda I actually get fertile eggs from Whole Foods market. I was wondering if this meant they were just not pasteurized, or??? In the next couple weeks though I will be getting fresh eggs! So exciting! $3.50 a dozen, but I don't care! Guest guest Posted October 20, 2004 Report Share Posted October 20, 2004 Angel, I have read that if you are going to blend the egg, you need to do so with raw fat present... so, if you are adding any raw cream, raw butter, or raw whole milk, your eggs shouldn't lose any nutrition! THere is nothing like eating a whole raw egg especially the yolk alone. I try not to wash them. I will wipe down if dirty.
