Jill ************ Her comments: I make a low carb pancake inexpensively and it tastes wonderful! I just use a little Splenda sweetened syrup from the store. Here's the recipe... I've lost the name of the person who provided the recipe. * Exported from MasterCook * Pecan Cheesecake Pancakes Recipe By : Serving Size : 2 Preparation Time :0:00 Categories : Breakfast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 eggs -- separated 4 ounces cream cheese -- softened, room temp 2 tablespoons Splenda 1/4 teaspoon vanilla extract 1/4 teaspoon cinnamon 1/3 cup pecans -- finely chopped butter for frying Beat the egg yolks and cream cheese together until smooth. Add Splenda, vanilla, cinnamon and pecans, stirring to mix thoroughly. Beat the egg whites until stiff but not dry. Gently, fold the egg whites into the cream cheese mixture. fry in butter over medium heat until golden brown, turning once. Serve with Maple Butter (see recipe) or sugar free Maple syrup. Maple Butter 1cup Butter, divided -- 1/2 cup melted and 1/2 cup simply softened at room temperature. 2 teaspoons maple flavored extract (to taste) 1 packet artificial sweetener (to taste) 1 teaspoon Brown Sugar Twin (to taste) Stir the maple flavored extract and the artificial sweetener into the melted butter. Combine the melted butter with the softened butter.
