Guest guest Posted September 19, 2004 Report Share Posted September 19, 2004 Hi Vicki, We pastuerize our milk for yogurt, because Dr. Fankhauser does it that way, and that's where we learned to make yogurt. (If any of you don't know about Fankhauser, check it out he is great! http://biology.clc.uc.edu/Fankhauser/Cheese/Cheese.html ) His reasoning is that you are incubating at 100-120 for 4 hours, the prime temp and timing for growth of all bacteria, and he doesn't want other bacteria competing with the lactobacillus and acidophilus. I'm not really worried about pathogens, butdon't want the competition; Barb worries about pathogens since we sell the yogurt. We do not pasturize our milk for kefir and we don't worry about it at all. Since we gave you your kefir grains, we know they were good :^), and since you are giving grains away and selling kefir, we know others like your kefir. You haven't acquired the taste for kefir, and that is okay. I doubt that using pasturized milk would make much difference, but you might try it. However, you might try fruit kefir and see if you like that. You might try with freshly washed grains and letting it sit for 12 hours instead of 24 to see if milder kefir is more paletable to you. Lenny and Barb ps this is an excerpt from a lady we sent grains to two weeks ago: " Mom loves the kefir and drinks it as fast as I can make it. I drink what is left over. She has gained from 104 to 116 so something is agreeing with her and also, her coughing caused from cancer in her lungs has stopped. " I was stunned, her mom has stage 4 cancer! Thanks Lenny and , my Keifer grains have found a wonderful new home I tried everything anyone could tell me to use, and other than sweetened with honey, and I don't need to be any sweeter I just couldn't tolorate the taste. But thanks for the good try Lenny! I also was blown away by the richness of your Nigerian/Lamancha milk, and this from a Nubian Breeder!Perhaps Lenny and Ms.F can come to the next goat meeting in November and set the record straight? We will plan on being at the next meeting and bringing kefir and grains for those who are interested. We have been " blown away " by the incredible health stories our customers and " kefir friends " have shared with us. We are starting to feel like ny Kefir seed, and we are comming to believe that it really is part of our mission in life right now.
