Also, I know how you feel in regards to the organic hitting your pocket book really hard. I have come to a point at the moment where I buy only my meat, and dairy organic, and other stuff if the price is right. I ferment also of my veggies to give them more nutrition to make up for their lack of being organic My family would starve if we bought only organic right now. I hope to be able to join a community garden this spring, so I can grow my own!

Go to www.wildfermentation.com for recipes on saurkraut. All you need

is cabbage and salt, no starter.

I am sure of that too. What I meant (and should have said) is that I

am a little better off with organic if I am going to have pasteurized

dairy at all.
