Please forgive me!! LOL ) Here it is. {ah-hem, cough, cough} Now, you know, each and every one of you that makes this has to share with me, right???? ) Wren : ) Hippo Pot de Mousse Recipe from Boynton, children's book author, adapted by Wren Olszewski ~Jan 1998~ 6 oz (semi-sweet, milk, bittersweet and/or unsweetened, like Baker's ) chocolate, or whichever of the chocolates you prefer, in whatever combination you desire 2 cups heavy cream, well chilled 1 tsp almond extract Stevia extract to taste if you use all Baker's Chocolate – not too much as this should have bite. 1. Melt chocolate and Stevia in microwave (sorry Anne!) or double broiler. Do not burn. 2. While chocolate cools, whip cream and almond extract together until stiff. 3. Gently fold in cooled chocolate; there will be flecks of chocolate in the mixture. 4. Pour gently into parfait or decorative cups and chill for 1 hour before serving. Enjoy! Now I wished I hadn't used up all my cream on making butter and ice cream ;o) Well, there's always next week! Thank you for the recipe!
