These are thompson seedless and the juice is sweet and as my husband

calls it *garden tasting* ;o) (which means green) - these are

definately not concord like in Dom's picture. I'll be curious to see

and taste the end result. If this gets thick like the milk kefir does

and it's green, I'm not so sure if it will look very drinkable - if

you know what I mean ::wink:: ::wink::

Be careful about exploding jars when making water kefir or kefir

champagne! I have no first-hand experience with these types of

high-sugar kefir ferments, but I can recall many posts on this list

and the kefir list about the dangers of exploding jars! You probably

already know about this, especially via Dom's site, but I figured it

wouldn't hurt to mention!

Water kefir doesn't get thick at all like kefir.

Heidi (of the Native-Nutrition group) kefirs apple juice as a regular

item in her diet and reports great things about it as a replacement

for alcoholic drinks that are based on grains (wheat, barley, etc).

Water kefir with fruit juices seems to be an ideal alcoholic drink for

people who have gluten problems.
