I'll be curious to see and taste the end result. If this gets thick like the milk kefir does and it's green, I'm not so sure if it will look very drinkable - if you know what I mean ::wink:: ::wink:: Rhonda @@@@@@@ Be careful about exploding jars when making water kefir or kefir champagne! I have no first-hand experience with these types of high-sugar kefir ferments, but I can recall many posts on this list and the kefir list about the dangers of exploding jars! You probably already know about this, especially via Dom's site, but I figured it wouldn't hurt to mention! Water kefir doesn't get thick at all like kefir. Heidi (of the Native-Nutrition group) kefirs apple juice as a regular item in her diet and reports great things about it as a replacement for alcoholic drinks that are based on grains (wheat, barley, etc). Water kefir with fruit juices seems to be an ideal alcoholic drink for people who have gluten problems.
