This may end with a rougher than normal surface and is not a concern. 3-4 more days your SCOBy should be 1/8 - 1/4 inch thick. Don't worry if there are bubbles or not trapped within the SCOBY. Using a SCOBY helps protect the start from mold and other wild yeasts and bacteria from taking up residence. It also provides a more complete balance of the various contributors to the SCOBY, where just using just the tea has a more limited production value.
