Occassionally I will forget some homemade raw butter that somehow gets lost in the back of the frig and find it weeks later or longer, smelling strong and cheesy, but I always eat it, and actually find it to be extra yummy on toast, on the very rare occasions that I even have any bread to toast. Sometimes the taste is not what you desire.... If it's really Strong, I will use appx 1/4 cup per fresh pound sticks. Mash/whip it together and Freeze. Don't think the flavor can last "out of freezer" very long. Next batch, try keeping out only the amount that you will use in a day for example.For about a year I thought that all raw butter had the cheesy flavor and I didn't like to eat it. Now that I keep it in the freezer, I love it! Many people love the cheesy flavor or some say that they don't eat raw butter for it's flavor but for it's value.Just found out about a place that is selling raw butter via UPS for $8 per pound plus shipping. It didn't have blue or green mold, but really had the taste, and was DELICIOUS. So I would even recommend allowing butter, if available, to culture beyond the norm. Tonio I just wanted to thank everyone who responded with ideas and suggestions. I wanted to make sure I can keep eating it. I eat cheese once in the blue, so I figured cheesy butter shouldn't be so bad.Popcorn, a great idea. I'll try it tomorrow w/ my daughter.
