Hello Pete:

The glychemic index of Kombucha will depend on how much

unfermented

sugar is present in the finished KT., which herbs are used

and the

proportion of the herb mixture.

For example: I am producing and using a Kombucha

Diabetic-Neuropathy

formula to prevent and control the glycemic surge (after

meals). Of

course this is very important for neuropathy sufferers, in

order to

prevent further nerve damage. I am making very sure that

this formula

has no sugar left in the finished product. Kombucha properly

prepared

is a tremendous help to prevent and reverse Diabetic and

Neuropathy.
