Guest guest Posted July 27, 2006 Report Posted July 27, 2006 Many folks use yerba mate. I suggest to use 1/4 part real blah blah blah plant, at least to stay within the acceptable range of kombucha tea. Harald Tietze or Guenther s have contibuted a lot of thought and research on herbal teas in Kombucha. s theorized it was the nitrogen in the plants that contributed to the kombucha. Some research indicates it may also be the caffeine. The caffeine becomes a food source of last choice. We know that kombucha can not live on sugar alone. I ferment regularly with yerba mate as well as Rooibos. Both tremondous healthy benifical herbs and seem to produce good KT and mushrooms. However the longevity of the ferment seems to fizzle out at some point after a few generations down the road. But not so when blah blah plant is added. live free and healthy Ed Kasper L.Ac.
