Guest guest Posted July 4, 2006 Report Share Posted July 4, 2006 I decanted my 10 day KT today, and decided to try the 2nd fermentation technique. I put the KT in a plastic liter coke bottle, added a sliver of ginger and a few bits of lemon peel (that I could get off an already squeezed lemon, lol). Next I gently squeezed the bottle to eliminate any air, and put the lid on tight. In a few minutes, there was an air pocket at the top of the bottle, so I opened it, squeezed again, and capped it. And then in a few minutes, there was the same air pocket! Is this normal? That was about 6 hours ago, and there is another air pocket (about 1/2 " headroom), and the bottle's quite firm to the squeeze. I'm thinking I might need to fridge it before bed tonight?
