Robin, if you've got it in the refrig, fermentation is slowed wayyy down.

A reason to put a solid lid on it in the fridge is just to avoid

refrigerator tastes and smells from invading the KT. But there is nothing

in terms of the brew itself that would require it. I just think it's a

good idea as there is a lot of mold inside refrig's.

The brew of KT is the whole culture, meaning, the solid part of the culture

is only the visible part, and the liquid contains all the organisms that

ferment the brew. So when we take the SCOBY out, it will still ferment if

left outside the fridge, whether it's got a solid cover or cloth/paper. It

will start to grow a new SCOBY, in fact. But in the fridge, all

fermentation is slowed way down.

Robin, in terms of just keeping your KT away from smells and things in the

fridge, a piece of wax paper works fine too, with a rubber band to keep it

in place-- I use (unbleached) wax paper and rubber bands for most of my

food wrapping. Also, I personally don't use plastic wrap, but there are

now brands of plastic wrap (and zip-lock bags, which I do use some of),

that don't have the plasticizer chemicals in them, and that I would

consider much safer to use. Natural Value is one brand, but there are others.
