And don't worry about kefir and kombucha on the same shelf, they are just one meter apart on my counter and they are fine. I have done it both ways and in each case a new culture forms on the top of the liquid. Also, the beauty or ugliness of the scoby is utterly unimportant. I have Kombucha, Kefir and water Kefir all sitting on the same shelf. This is not a problem. However, I do use separate implements (strainers, stirring spoons for each probiotic) in order not to get the bacteria/yeasts mixed up. So, a little care will safeguard the purity of each ferment. Some sites recommend putting the smooth side up but the word on this list is that it really doesn't matter and that the SCOBY will find its way just fine. However, if you want to turn it over, you can, just wash your hands and rinse them well do not get any soap in your brew! I'd just leave it tho, because any development of the new SCOBY that's already occurred will be disturbed and it will delay your brew a bit. I had the same thing happen to my first one (recently), and I think it righted itself eventualy. I read to pour in half of the cup of starter first 1.2c., then tea, kombucha and last starter 1/2c.
