Avocado macaroni salad

A friend asked for some recipes and I typed this up for her, I

thought it would be a waste to not share it here too.

Avocado macaroni salad:

dressing:

1/2 small onion, diced

2 tablespoons lemon juice

1 tablespoon light sesame oil

2 tablespoons water

1/2 teaspoon prepared mustard

1/2 teaspoon sea salt

Basic Salad

1 cup uncooked artichoke or whole wheat macaroni

1 medium carrot, diced

1 celery stalk, diced

1 small avocado

1/4 cup chopped parsley

1 scallion, chopped

1/4 cup toasted sesame seeds (there is somewhere else with

directions)

4 large or 8 small green olives, sliced

Puree onion, lemon juice, oil, water, mustard and salt in blender,

food processor or suribachi. Set aside.

Boil macaroni in a medium sized saucepan for 10-15 mins or until

tender. Drain macaroni and place in medium-sized salad bowl. Set

aside to cool.

Steam carrot and celery for 2 mins until cooked but still firm.

Slice avocado in half, remove pit, and peel. Cut into 1/2-inch

chunks. Place steamed veggies, avocado, parsley, scallion,

sunflower seeds, and olives in salad bowl with macaroni. Moisten

salad with as much dressing as desired, and mix well. Serve

immediately, or refrigerate for 1 hour before serving.
