Avocado macaroni salad: dressing: 1/2 small onion, diced 2 tablespoons lemon juice 1 tablespoon light sesame oil 2 tablespoons water 1/2 teaspoon prepared mustard 1/2 teaspoon sea salt Basic Salad 1 cup uncooked artichoke or whole wheat macaroni 1 medium carrot, diced 1 celery stalk, diced 1 small avocado 1/4 cup chopped parsley 1 scallion, chopped 1/4 cup toasted sesame seeds (there is somewhere else with directions) 4 large or 8 small green olives, sliced Puree onion, lemon juice, oil, water, mustard and salt in blender, food processor or suribachi. Set aside. Boil macaroni in a medium sized saucepan for 10-15 mins or until tender. Drain macaroni and place in medium-sized salad bowl. Set aside to cool. Steam carrot and celery for 2 mins until cooked but still firm. Slice avocado in half, remove pit, and peel. Cut into 1/2-inch chunks. Place steamed veggies, avocado, parsley, scallion, sunflower seeds, and olives in salad bowl with macaroni. Moisten salad with as much dressing as desired, and mix well.
