Guest guest Posted February 9, 2004 Report Share Posted February 9, 2004 Makes 2 pies Dry: 8 cups granola (rolled oats and nuts) Wet: 1/4 cup corn oil 1/4 cup maple syrup (or br rice syrup) 1/4 cup apple juice Filling: 2 cups soymilk (I use rice) 2 cups apple juice 3/4 cup rice syrup 3/4 cup maple syrup (I usually add more rice syrup) 3/4 cup lime juice and lime rind 3/4 Tbsp. agar agar (powder) 1/2 tsp sea salt 1 Tbsp vanilla extract 6 Tbsp arrowroot Topping: 2 lb tofu 1 cup maple syrup 1/8 cup soymilk 1/4 tsp sea salt 1 Tbsp vanilla extract Decoration Lime 1. Preheat over to 325-350 2. Oil 2 pie pans 3. Place granola and all the wet ingredients into a food processor with a metal blade. Mix them 5-10 seconds, unitl about half way cut. 4. Place mixture in the pie pans. Spread mixture over bottom and sides of the pans, press firmly. 5. Bake 7 minutes. Do not overbake 6. Remove the crust and place on a wire rack to cool. Set aside 7. Squeeze the lime juice, about 1/4 cup. 8. Grate the lime rind 9. Place all ingredients for the filling into a sauce pan (except arrowroot), and bring to a boil. Add arrowroot mixed with apple juice. Simmer for a couple of minutes, stirring occasionally. Set aside and wait 15 minutes to cool down. 10. Pour filling into pie shell. Place in fridge and allow the filling to set. 11. Place all tofu cream ingredients into a food processor and mix until smooth. 12. Place tofu cream on the filling. Using a metal spatula, spread flat. 13. Slice lim and cut into 1/8 moons 14. Decorate by placing the cut-up lime on the tofu cream. 15. Store in the refrigerator. Serve cold By Satoru Sato from his book Chef Sato's all-natural desserts It is really yummy!
