Quiche for all seasons:

1/2 recipe of special pastry or flaky pastry fillng

2 tbsp olive oil

2 lg cloves garlic minced (I omited them)

1/2 cup chopped leeks, onion, scallions or shallots

2 cups steamed veggies (carrot brocolli, peas, green beans, or corn)

I used broc and carrots

1 lb tofu

2 tbsp kuzu disolved in

1/4 cup cold water

sea salt, shoyu or miso and umeboshi vinegar to taste

thyme and dill to taste

1-Preheat oven to 350

2-Prepare pastry crust and set aside

3-Saute minced garlic and choice of onion until soft. Add your

choice of veggies and a small amount of water or vegetable stock and

steam until just tender

4-combine tofu, kuzu mixture, herbs and seasoning in blender or food

processor and blend until smooth and creamy. Add water, vegetable

stock or soymilk (I used rice) for a thick creamy consistency.

5-Combine tofu cream and prepared veggies and pour into crust or

oiled pan

6-bake for 30-45 mins or until puffed and set.

7-cool 5 mins before serving.

Crust: I used the Flaky Pie Crust

Remember use only half

1 1/2 cup Whole Wheat Pastry Flour

1/2 cup unbleached flour

1/4 tsp sea salt

1/3 cup +1 tbsp corn oil or oil of choice

2-4 tbsp soy milk (I prefer to use rice)

1-Combine all flours and salt

2-blend in the oil using a pastry blender or your hands. Add the

milk gradually until the dough forms a ball and leaves the sides of

the bowl.

3-Roll out dough to fit pie plate. It is very tender and rather

difficult to work with. Don't be afraid to use plenty of unbleached

flour on rolling surface and rolling pin so it won't stick.

4-Place in pie plate and flute edges or trim as desired.

5-Bake 8-10 mins at 350F before filling, then continue baking until

filling is done. Any leftover dough can be used to make strips or

cutouts for the tope of the filling.

What is kuzu? Havent heard of it but quiche sounds good. I havent

eaten quiche since i didnt think their was a veggie alternative so am

surprised again.

Btw, the holiday dinner went well and my gravy was a big hit... i

made one with " Gimme Lean " sausage flavor and also a wheat-free

version without tamari [barley miso].

I got to hold my 6 mo. old niece Justice who was all smiles besides

one of the pointer-spaniel pups [3 wks old]. I got my baby fix :]. DS
