Hi Tonio and all,

I have been on vacation in Jamaica and Gr. Cayman (sigh) for a while,

so I am behind on answering emails. Tonio, I think you asked me if I

had ever heard of making kombucha with anything other than black tea.

Yes, I make mine with 4 bags of black and one bag of green tea or white

tea. I am also on the kombucha family chat group and there are folks

on there making kombucha with grape juice, cranberry juice, gunpowder

and oatstraw tea, and believe it or not Mountain Dew. The kombucha of

course, consumes all the caffeine and sugar so it works out okay.

Hi ,

Sounds like it was (sigh) beautiful and wonderful. Thanks for the kombucha stuff. I'm surprised no one is doing it with Coke or Pepsi, that might take care of the caffiene and sugar all in one.

What is your recipe, with water amounts, sugar(what kind you use...) Ferment ing time... It's been a long time and I don't remember the formula. And I have a kombucha scoby ready to go.

Hmm I was under the impression that the Caffeine is NOT consumed?

The scoby just eats the sugar I thought?

I am sure with all the crazy and fun people on that Kombucha list,

someone WILl eventually announce that they have tried it with Coke or

Pepsi. BTW, I stand corrected, the caffeine is NOT used up by the

scoby during the fermentation process. It is only the sugar that is

mostly used up. You can use decaffeinated tea bags though, which are

about 3% caffeine. Anyway. with regards to my formula, I use 3 quarts

r/o distilled water, 1 cup of sugar, 4 decaf. black tea bags, and one

white tea bag. Sometimes I will also use Rapadura sugar, which creates

a cloudy sort of brew, still good though. Then I let it sit for oh, I

dunno, 7 to 12 days, depending on how tart I want to get it.
