For years, I have wanted to find a recipe for a cold lentil salad made with top

ramen noodles in it. I don't remember it well... just remember that it was

delicious. Seems like it had a vinegarette dressing.

If you know it... or a great salad recipe... I would love to hear it.

Hi Elle

I took a Chinese cooking class in 1976. My children , to this day, beg me to

fix this, actually rather high protein salad.

Coriander Chicken Salad

1 roast chicken from grocery

1 bunch green onions shredded

1 bunch chinese parsley( coriander) stems removed

1 T toasted sesame seeds

1/4 cup walnuts

1/2 head shredded iceberg lettuce

Shred chichen and toss with above ingredients

Make dressing of:

2 T soy sauce

3 T rice vinegar

3 T salad oil

1 tsp sesame oil

2 T dry mustard, mixed with a little cold water, let stand for a few

minutes

Thats all. Have a happy fourth of July. Hope you enjoy this as much as we do.
