It is all about fermented food, you know yogurt, kefir, kraut, grains, beans and the latest craze..kombucha. There are many knowledgeable people including some book authors. Just do a search in Yahoo groups. The group is not as active as sproutspeople but good. I am going to do a big gallon jar of Brussels sprouts the way I know how: water and salt. I was looking for a more interesting recipe. Maybe try some onions and carrots, maybe if I get daring curry. Fermented food improves digestion. People who eat yogurt have long lives. And, it is my understanding that a serving of fermented vegetables is equal to 1-2 vitamin capsules. It is high in Vitamin C and vitamin K. Plus Sprouts, and you have it made....... The down side is: wine is fermented, whiskey is fermented, gin is fermented, you know...it has a little alcohol.:} I never so far got " tipsy " on my vegetables :} Recently a book came out " Fermented Foods and Beverages of the World " The table of contents can be viewed if one does a search on health aspects of fermented foods. I am a huge pickle fan and occasionally make my own nondairy yogurt. I like water kefir too.
