I am not sure why there are times I post and it goes straight thru to

the board and other times I click the post message and it does not

appear anywhere. Below is a repeat post, sorry but this did not post

to the board and this has happened a few times. When I reply to

another post it gets posted but if I start a new post it seems to get

lost in cyber land...does anyone know why? Is this board moderated or

not? I am really confused. Anyway below is my post:

I was beginning to think I had completely killed my culture, because I

was not seeing any new scoby on the top of my brew after four days of

brewing (you might have read about my fiasco of thinking brown yeast

was mold, and tossing out most of the brew).

However about the 5th day into the brewing process I decided to decant

some of the liquid and give the culture a greater surface area to

grow. It really worked, I suddenly have a nice round (though thin at

this time) scoby growing. I am on day 7 at the moment and have decided

to let it grow a little longer, maybe 10 days. The brew is weak

tasting, but it is fizzy and smells very nice this time. I can not

wait to bottle it, I think I may have got better at the carbonation

process, though I have NO idea what I did differently this time except

I used a 2 to 3 green to brown tea ratio, plus I added two orange

spice roobio tea bags for better tasing.

I did use half white sugar and half raw sugar (I ran out of the white

sugar so I thought I would try it). Maybe that is why it is weak.

Anyone else use only raw sugar and get a weaker tea taste?

Kellie
