I wouldn't throw out the coconut oil for cooking /in diet just yet. They are

finding out the amazing health properties of the coconut and its oil every day.

Here's a link showing it will actually lower your triglycerides and helps

regulate cholesterol..... and it tasted fantastic!

I don't trust coconut oil. I have a tendency towards triglycerides or maybe my

blood test went to a bad lab and coconut oil is a medium chain triglyceride. Why

add fire to fire? I do use my low fat dressing made of chia seeds and maybe

enjoy a teaspoon of flax seed oil. Chia seeds have omegas 3 and very important:

they are tremendously high in calcium. I think there are 300 mg of calcium per

serving. As a vegan, I think why milk? give them chia pudding.....

Also, they have fiber. Unlike flax seeds, they are not gritty.

Thanks Don. I have read that about olive oil before. Trouble is coconut oil

probably will taste weird in our Italian sauce :) we seldom have it though so

it's usually uncooked olive oil we are using.

i was going to say .. coconut oil I hear is good for you. I think we have all

been scared to death about LOWERING our fat intake.. but it is completely the

opposite.. eat GOOD fats! & coconut is a good fat.

I use coconut butter (or oil as it is also called) in many of my recipes. Below

is the link to a recipe of a chocolate pie which is considered raw and organic

in the raw food world.....also I want to thank all the ones in this group for

the wonderful information I receive from them...This makes the light of my day

to learn something new and better to eat..

Oh LInda, that is from the Gratitude restaurant. I have been meaning to buy

their first book, but haven't gotten around to it yet.thanks for sharing that.I

made a coconut cream icing for the raw carrot cake I made last week and one of

the main ingredients was coconut oil. It was so delicious. The icing might be

from , but I am not sure, I know the cake isn't. He does have his

own carrot cake recipe though and i am sure it is wonderful. I just decided to

go with this one instead.Here is the recipe for anyone who is

interested: Icing:For the Icing:

3/4 cup raw cashews1/2 cup water2 TBsp agave 3 TBsp coconut oil1/2 TBsp

vanilla1/4 tsp saltPut all in the blender and blend until smooth. Can also be

made in food processor. If you make it in the food processor, I think it would

work out best if you soak the cashews.

Cake: Does not have to be dehydrated at all-I put it in the D maybe for a half

hour, but I don't think it did anything for it.For the Carrot Cake:

2 cups shredded carrots (about .5 lb)yh1/4 cup dates (about 4 pitted dates)1/2

cup walnuts1/3 cup dried apricots3/4 cups unsweetened shredded coconut1/4 cup

raisins or currants1/2 teaspoon cinnamon1/4 teaspoon nutmeg1/4 teaspoon allspice

Grate the carrot, preferably in a food processor. Set aside in large mixing

bowl.

Put the dates, apricots, and walnuts into the food processor and pulverize the

mixture until it is grainy like cake crumbs, but not a paste. Add to the mixing

bowl with carrots and stir. Add spices and raisins and stir well. I think

Put everything back into the food processor and mix until it looks doughy and

can hold a shape. Move everything back to the mixing bowl and fold in the

coconut.I put mine in a small cheesecake pan with removeable sides and then iced

it. The icing recipe makes much more than you need for this little cake.

Yes, it is...I sent the recipe to the meringue to the same link...I's soooooooo

good. I have the pie sitting in my fridge as we speak waiting for my grandkids

who love chocolate like I do.. B. The lemon pie from the book I've tried

too, but just a little toooo tart...maybe meyer lemons whould have been better

since they are sweeter that others...
