I could not afford to supplement with Omega 3, so I decided to give up as much Omega 6 as possible. I cannot escape some Omega 6 because I am forced by economic necessity to eat as many meals as possible at the senior center and they fry everything in Canola oil. Polyunsaturated oils are just pure Omega 6. But I did give up salad dressing unless I knew it was made with pure olive oil and as a consequence, my wet macular degeneration quit bleeding into my eyeballs after about six months. I also ate sardines on weekends. It can keep at room temperature for a very long time. It is solid up to about 74 degrees. If you keep it in the fridge, it will be as hard as a rock andyou will haveto chip it out of the jar. Lol aternatively, put the jar in a bowl of hot water (not boilng hot, just what you can get from your kitchen sink). After afew minutes, it will melt around the sides and you can pour off what you need. Coconut oil is wonderful stuff. It does nice things for my brain injured son's short term memory. It is supposed to be one of the best oils for diabetics, too. My favorite place to get really high quality coconut oil is: http://www.tropicaltraditions.com They support small family operations, who produce the oil in the traditional way. I also made some raw pumpkin seed butter and an almond garlic pate. I am looking forward to lunch!I got the recipes from Mike Synder's Raw Food Recipes book (in the Everything book series). He has quite a few sprout recipes and at the moment it is my new favorite book to cook/prepare food from. Nice guy too-I bought a sauerkraut maker from him and was amazed at how helpful and sharing of his knowledge he is.More and more i am seeing sprouts hitting the mainstream. I spent about 2 hours in the local Borders bookstore last night (I have a VERY patient husband) perusing the cooking section. Lots of healthy cooking and living food books and many have something on sprouts. nstaying home today to clean house and prepare food--bliss! Since I stopped using the Mason Jars for sprouting and I only use the Sprout Garden green trays, it has made my life SO much easier. I used to only make my salads with my sprouts. I have been adding some organic spring mix and it kicks it up a notch. I just love the various colors in the salads. I have a question about using other sprouts to make my birds nest patties. Now I have only used bean sprouts to make them. I wonder. If I added some of my fenugreek, radish and broccoli sprout mixture TO THE BEAN SPROUT mixture, and added the rest of the ingredients like the panko crumbs, the egg, and various seasonings, and then make the patty (I call them patties but they are just clumps of sprouts), and then I fry them and turn them over, well, my question is " can we cook our sprouts and would doing this take any of the nutrition out of them? I have never done this. I have only used my sprout mixture in the raw state. Because they are alive, having living enzymes, etc. etc. I was wondering if I could add them to the bean sprouts and get a whole new birds next experience? Or would that be dumb because it would kill the nutrition? I keep a small bottle beside my bed to rub on my skin for moisturizing too. I love the way it smells. Traditionally, in Indian cultures, people rub down with some kind of oil before bathing. For that, I use raw Sesame Oil  in Winter and Mustard Oil when I don't feel good or have muscle aches. Great stuff and I keep all of it at room temperature. I cook with them all too but have separate bottles for that lolArtisana makes some very nice spreads that incorporate coconut oil-my favorites are Goji Bliss and Cacao Bliss. Probably not good for a diabetic diet though. I don't eat them myself too often as I prefer to have my goji berries in a trail mix or soaked and put in something else. I did make wild blueberry pancakes this morning and think it was a tiny bit of canola oil I greased the pan with. That is the only time I use anything other than olive oil to cook with. Coconut oil I use in lots of raw food recipes. I have a tendency towards triglycerides or maybe my blood test went to a bad lab and coconut oil is a medium chain triglyceride. Why add fire to fire? I do use my low fat dressing made of chia seeds and maybe enjoy a teaspoon of flax seed oil. Chia seeds have omegas 3 and very important: they are tremendously high in calcium. I think there are 300 mg of calcium per serving. As a vegan, I think why milk? give them chia pudding..... Also, they have fiber.
