Guest guest Posted October 29, 2003 Report Share Posted October 29, 2003 I just got a lamb brain (in fact, an entire lamb skull split in half, complete with eyes) and a lamb kidney, and I'm wondering what to do with them. I suppose optimally they'd both be eaten raw, but I'm not sure I'm ready to try that. Any suggestions? The farmer suggested rubbing the brain and skull with herbs and butter and roasting it -- in the skull -- and sauteing the kidney with mushrooms in butter and then deglazing the pan with Madeira, but Madeira is a sweet wine, right?
